you are best off pricelining it. Prices vary widely from month to month even from the same places. Even some of the best hotels in Manhattan have small rooms. Unless you want to stay in NJ.

try airbnb and find yourself a non-hotel apartment near a good train line in brooklyn. you won't have to pay hotel prices.
There's a bunch of hotels way under $200/night in Long Island City, Queens, and it's a short 10 min subway ride into Midtown Manhattan.
I'm assuming you will be in NYC for a while considering you are coming from the other side of the pond... you may want to check out craigslist.org. Rent an apartment from someone leaving town during the summer. There's risk involved with that though - as it might fall through. Would be the cheapest way to stay in a nice part of town though

Which airport are you coming through? And what are you looking to do?
I second the comment about prices varying, and around Christmas, especially after, they seem to get expensive.
There is a residence inn near 42nd that looks nice.
But check your hotels.com and similar sites - then I would ask again about location, etc.
There was one hotel near 2 penn that my old employer had out of towners stay at - the Affinia hotel on 7th & 31st. Evidently, some of the rooms were funky - as in having gas stoves in them, etc.
I was able to stay in La Quinta in Elmsford for just over a $100 a night this past January and you get a breakfast. If you have kids they have a big pool. I was able to get down to the Bronx to see my sister in 15 minutes. I had a hospital rate but I don't think it was much of a discount. You also are not far from metro north there if you want to go into the city without a car.

the cost factor in staying outside manhattan is huge, but if you can find a good deal, there is nothing like being able to simply walk back, especially after a late night.

I was going to also suggest hoboken - but have no idea if there are any cheap hotels there or not.
Downtown JC and Hoboken same thing. Nice hotels in downtown jc
Nice bars in Hoboken too
Groupon and Living Social have all kinds of discounts online for everything under the sun.
There's a W in Hoboken but thats just as expensive as NYC almost.
Like I said, go on priceline for one in Manhattan at your budget. Priceline works better than you would think in major cities. Put at least 3 stars and your budget (i.e. $200 per night).
Otherwise stay at the Marriott @ Glenpointe in Teaneck. ITs cheap and there's a bus that takes you into port authority in 20 mins that leaves pretty often.
Yea there's a Westin in JC too but there's also a candlewood suites, holiday inn Marriott and Hilton garden
Priceline groupon and living social are good idea though as we'll as Teaneck or downtown newark
